Colibri Knives is a specialty Wood and Metal Fabricator in North County San Diego, California. I focus on high end tools for cooks and chefs and I am always looking to create the next unique piece for your roll or bain.

I started my culinary career at the age of 14 in the FOH but was always more interested in the food coming out of the kitchen. After putting my time in on the dish pit I started on prep and rose through the ranks. At 18 I was working the hot line at a Michelin Starred restaurant in Chicago while attending Le Cordon Bleu during the day. After school I decided to leave Chicago and spent the next 5 years traveling and chasing the next opportunity. My career took me all over the United States and I worked with some absolutely incredible humans. I settled down in San Diego, California about 10 years ago and became interested in woodworking. I slowly took on different projects until I learned how to machine, weld, fabricate…pretty much do whatever I wanted until one day I thought it would be cool to make a chef knife, so I did. It was pretty bad but I loved it and I kept at it. After about a year I started posting my work and it took off in ways I could have never imagined. The Colibri knives you see today is very much non linear - I don’t have an exact goal or expectations in mind, I just always make what I think is exciting.

5 years ago I started to lose my passion for being a Chef, not for cooking but for the day to day responsibilities of managing people. I decided to step down and go back to school for Mechanical Engineering in 2022. I quickly realized I was never going to be a desk person and decided to pursue my passion of creating with my hands. I joined Local 230 in the United Association as a Pipe Welder and Fitter and I absolutely love it. A lot of what I loved about being in the kitchen translates over to being in the trades but for the first time I have a huge quality of life outside of work.
